Ponorogo Chicken Satay Since the Age of the Kingdom of Java

Ponorogo chicken satay is a type of satay originating from the city of Ponorogo, East Java. The word “sate” itself comes from the Javanese Ponorogo dialect, namely Sak Biting (pronounced Sak Beteng) which means one skewer, biting is a stick. Therefore, Ponorogo satay uses a stick as a skewer.

This culinary itself has been since the time of Wengker (now Ponorogo). This food was only known by Batoro Katong as the first Ponorogo Regent in the 15th century after conquering Wengker to become Ponorogo. Sate has become the warok’s food, so the age of satay food can be older since it was discovered by Batoro Katong.

Like other satay, Sate Ponorogo also uses chicken as its main ingredient. The Ponorogo satay chicken meat is not cut into cubes, but is cut in a filet way, namely thinly slicing the chicken meat. Therefore, the resulting meat is thin and fat-free.

The next difference is that the Ponorogo satay goes through a process of soaking the spices or “dibacem” so that the spices seep into the meat. After the seasoning is evenly distributed, the satay is grilled for approximately 3-5 minutes. The Ponorogo satay grill is made of a clay stove. The satay is dipped several times or smeared with spices during the roasting process. Once cooked, the satay is smeared with peanut sauce. Zn
